Thai Mango with Sticky Rice Pudding Dessert

Ingredients
1 cup of glutinous Thai rice
2 ripe mangoes
5 tbsp palm sugar or brown sugar
1 can of coconut milk.
4 tbsp Sugar

Preparation
• Soak the rice in one and a half cups of water, keep it covered and put aside for 30 minutes.
• Add ½ can coconut milk, ¼ tsp salt and 1 tbsp of sugar and stir continuously.
• Keep ½ the can of coconut milk for the sauce.
• Bring to a boil.
• Reduce the heat and simmer for 20 minutes until the rice absorbs the coconut water.
• Turn off the heat but leave the pot covered with the lid. Allow it to sit for 15 minutes.
• Now lets make the sauce. Use the left over coconut milk. Bring it to a boil and add 3 tbsp of sugar and stir to dissolve.
• Make mango balls by using a scoop. You can also dice or slice the mango.
• Put some warm rice into the serving bowl and put a mango scoop or slice on top. Drizzle a lot of coconut sauce on top.
• Garnish with fresh mint and serve.
Make sure to check the sugar before serving. Remember that when you add the sauce to the rice then it tastes less sweet. You can increase the quantity of sugar as per your taste. Also check the sweetness of the mangoes because they are sometimes a little raw or sour to taste. You can adjust the sugar accordingly. Also check the quantity since this is just enough to serve four people. You can increase the quantity according to the number of guests you are expecting.
